Hearty Zuppa Toscana

So not only will I post up food that has a nerdy spin to it I also want to do foods that are good for people to try that are not to hard for people and are delicious!  This one is about zuppa Toscana.  My boyfriend tried this soup at olive garden and fell in love with it.  So I tried my hand at it and its really simple!  Just takes some time.

So I looked at some recpies on the internet like always and they all seem to be about the same but some have water and some don't is the only big difference that I found.  But I did tweek it just a tad bit.  I hate really runny soup and I noticed most of the pictures they are really runny soup with some hint of kale and meat.  So I took down the liquids just a tad bit to make this...

Ingredients:

  • 16 oz spicy Italian sausage (mild works too)
  • 8 Slices of bacon (Try not to get really fatty bacon or it won't cook right)
  • 1/2 Large onion diced up
  • 1 Tbsp of minced garlic
  • 28 oz chicken broth
  • 1 1/2 cups of water
  • 5 medium yukon potatoes, thinly sliced with skin on
  • Salt and pepper to taste
  • 4 cups chopped kale
  • 1 cup heavy whipping cream
  • Parmesan cheese for toppings

Instructions:

  1. In a large pot brown 16 oz of sausage
  2. Remove the sausage with slotted spoon leaving behind the liquid
  3. Cut the bacon into small pieces and cook till crispy
  4. Add chopped onion and cook for 5 minutes.  Stirring till there translucent
  5. Add Garlic and stir frequently for 1 minute
  6. Add water and chicken broth
  7. Salt and pepper to taste
  8. Thinly slice the potatoes and add to the soup
  9. Add Sausage to the soup cook for 10 minutes
  10. Add the Kale to the stew and cover with a lid.  Allow it to simmer for 10 minutes stirring occasionally
  11. Stir in the heavy cream till soup is hot
  12. Serve soup with parmesan cheese on top

Simple easy and good!

On a side note I'm coming up with a idea to do once a month that is hugely based on a game that was nominated for game of the year for 2017.  It will show the fails the wins and just the fun process of bringing gaming food to life!
